Hippie-Deluxe BarCamp Vancouver Food

After a night that was way too long (and with a good chunk of help from Dan, Elizabeth and Mandy - thanks folks!), we now have hippie-deluxe (and I don't mean that in a pejorative way) vegan allergy-sensitive food for BarCamp Vancouver.

Hippie-deluxe, in this case, means organic ingredients from local farmers (within a day's drive).

Allergy sensitive means that all of the ingredients are carefully labeled, I was careful to avoid cross-contamination between dishes and I avoided most of the major allergy items (dairy, gluten, ground nuts, tree nuts, seafood, shellfish, wheat). One dish has soy, but it is clearly labeled.

I really just made two things - potato-based dips and a salad.

The dips were:

  • Caramelized onion, golden plums, hemp oil, fresh sage and sea salt.
  • Boiled potato, caramelized garlic, fresh thyme and sea salt.
  • Boiled potato, spinach, fresh oregano and sea salt.
  • Roasted eggplant, boiled potato, smoked tofu (?!?), braised fennel, hemp oil, thyme and sea salt.

The salad was:

  • Broccoli
  • Tomato
  • Roasted potato
  • Golden plums
  • Shitake mushrooms
  • Fresh fennel
  • Hemp oil
  • Garlic
  • Fresh thyme
  • Sea salt

The salad was served in savoy cabbage leaves, while the dips were served with roasted red potatoes for dipping and were put on a bed of kale leaves.

    I had a wonderful time at BarCamp. Thanks so much for organizing such a great event! And the vegan food was delicious!
